Apple almond flour cupcakes

Apple almond flour muffins

I made these yesterday from an Elana's Pantry recipe. YUM.

2 cups almond flour
1/2 teaspoon sea salt
1/2 teaspoon baking soda
1/4 cup arrowroot powder
1 teaspoon ground cinnamon
1/4 cup grapeseed oil
1/2 cup honey (I think this is too much... I used less.)
1 egg
1 tablespoon vanilla
2 medium apples, peeled, cored, and diced into 1/4 inch cubes


Preheat oven to 350 degrees.
In large bowl, combine flour, salt, baking soda, arrowroot, and cinnamon. In medium bowl, whisk together grapeseed oil, honey, egg, and vanilla. Stir wet ingredients into dry ingredients until combined, then fold in apples. Bake for 30-35 minutes, until top of muffins are golden brown. Let cool for 30 min.

  2. Hey, I just tried to make these and had an EPIC FAIL! Please help! They overflowed and completely burned and tasted like too much arrowroot or something? I just put the recipe in 12 muffins because I didn't know how much it made either.
    Thanks I really want to make them for Derek because yours were soo good!

  3. Ooooo... sorry! I ended up making more than 12. Not much more though. The first time I made them (baby shower), I made ~ 18 muffins out of this recipe. I made them again yesterday and filled ~16 muffins. In Elana's recipe, she said the above should fill 10 muffin tins but I thought that was just too much per muffin.

    If they don't turn out, I'll make some for you and Derek! They are good... we were snacking on them at the Relay for Life last night. :)
